Christmas is just around the corner and I’ve got the perfect Christmas morning treat to serve your family.  This delicious Cranberry Apple Brioche Bread Pudding with Eggnog Sauce has all the flavors of Christmas wrapped up in one pan!  It’s become a Christmas tradition in our house and is sure to become one in yours, too!

If you love bread pudding as much as I do then you’ll definitely want to give this recipe a try.  It features soft brioche bread, tangy cranberries, and comforting apples, and crunchy walnuts all topped with a too-good-to miss eggnog sauce.  Not an eggnog fan?  No worries, just leave the sauce off!   It’s perfect either way!

The beauty of this recipe is that it can be made ahead the day before and then baked the next morning, allowing you plenty of time to check out what Santa left you under the tree!  Get your family involved in the cubing, dicing, and chopping of the bread, cranberries, apples and walnuts while you beat the eggs and add the milk, vanilla, and sugar.  Finish assembling the ingredients in the pan, cover it with foil and stick it in the refrigerator then enjoy the rest of the day with your family (or finish wrapping packages if you’re a last minute wrapper like me!)

But wait…there’s more!  Not only is this bread pudding a great morning treat, it can also be served as a not-too-sweet dessert.  Plus, it is just as good eaten warm or cold.  How’s that for the perfect versatile recipe?

Cranberry Apple Brioche Bread Pudding with Eggnog Sauce

Cranberry Apple Brioche Bread Pudding from A Fun and Frugal Life

Ingredients

  • Bread Pudding:
  • 10 c brioche bread, cubed (I used a 16.9 oz package of brioche slider rolls, there were 12 rolls in the package)
  • 2 c fresh cranberries, cut in half
  • 2 apples, peeled and diced (approx 2 cups)
  • 3/4 c walnuts, chopped
  • 6 large eggs
  • 4 c whole milk
  • 1 tsp vanilla
  • 1 c sugar, divided
  • Crumb Topping:
  • 1/2 c white sugar
  • 1 c brown sugar, packed
  • 1/2 c flour
  • 1/8 tsp salt
  • 6 Tbsp butter, melted
  • Eggnog Sauce:
  • 1 c eggnog
  • 1/8 tsp ground nutmeg
  • 1 Tbsp cornstarch

Instructions

  1. Cut cranberries in half and mix with 1/4 c sugar. Set aside for 15-30 minutes while cubing bread, dicing the apples and chopping the walnuts.
  2. In a large bowl, beat the eggs, milk, vanilla and 3/4 cup sugar until blended.
  3. In a greased 9x13 inch baking dish, layer half of the bread cubes, sugared cranberries, diced apples and walnut pieces. Repeat layers. Pour the liquid mixture over the top and press down so the liquid covers all of the bread. Let stand for 15-30 minutes or overnight.
  4. For the crumb topping, mix together the white sugar, brown sugar, flour and salt until well combined. Then stir in the melted butter.
  5. Right before baking sprinkle the crumb topping over the bread pudding.
  6. Cover with foil and bake at 350° for 35 minutes. Take the foil off and bake for 30-40 additional minutes until a knife inserted in the center comes out clean.
  7. To make the eggnog sauce whisk all ingredients together in a small saucepan. Set over medium heat and bring to a boil, stirring constantly. Continue to stir and boil for one minute until sauce has thickened.
  8. When ready to serve, drizzle the eggnog sauce on each slice.
  9. Can be served warm or cold.
