We first tried this recipe when we visited our dear friend Doris Page in Sun City, CA several years ago.  It’s been a family favorite ever since.  Doris baked hers in the oven and so did I until I discovered an easy crock pot recipe.  It was so much easier to just throw all the ingredients in the crock pot and let it cook all day!  A few days ago I found myself craving this recipe but unfortunately I didn’t have 3 hours until dinner time.  So what did I do?  I tested it in my handy electric pressure cooker and once again it turned out great.  In less than 25 minutes dinner was on the table and my craving was satisfied!

This recipe is so simple and inexpensive to make.  Just 4 ingredients which I always try to keep on hand!

Electric Pressure Cooker - Cranberry Chicken from A Fun and Frugal Life

 

1 can of whole berry Cranberry sauce
1 cup of French, Catalina or Western dressing
1 packet of Onion Soup mix
4 thawed boneless, skinless chicken breasts, cut into chunks
Cooked rice or noodles

Pour cranberry sauce, dressing, and soup mix into pressure cooker and stir to combine then stir in chicken.  Close lid on the pressure cooker and set the cook time to 10 minutes.  Once again I did not adjust the pressure setting so it cooked at the default pressure of 70 kPa.  It will take approximately 10 minutes to pressurize and then it will start the 10 minute cooking time.  Once the timer goes off,  carefully lower the pressure using the quick pressure release valve.  The sauce will be slightly runny which we prefer because it soaks into the rice, but some of you may want to thicken it a bit.  Just turn the cooker to low temp cooking then stir in cornstarch and water and let it cook for a couple of minutes until thickened. Serve over cooked rice or noodles and enjoy!

For those of you who prefer to use a crock pot just combine all the ingredients and cook on high for 3 hours. This recipe is delicious either way!

  1. I make something like this, but I used bone in pork chops which I browned in skillet w/ very little oil. Brown on both sides put on clean plate. Drain grease from pan and return chops to pan. In a bowl combine onion soup mix, cranberries sauce and French dressing (homemade) mix well and pour over chops and heat for 20 mins or til chops are cooked through.
