Microwave Stuffed Peppers

Need a quick go-to recipe for night's when you'd rather go to a drive-thru? Check out this receipe for Microwave Stuffed Peppers. You'll have them on teh table before you know it!Here is a family favorite recipe for quick stuffed peppers cooked in the microwave.  I’m not a fan of green peppers so I use red, orange or yellow depending on what’s on sale.  This recipe is so fast to prepare.  It’s perfect for nights when you’d rather just hit the drive-thru!

 

4-5 large peppers (red, yellow, orange or green)
1 can whole kernel corn, drained
1 lb ground beef or turkey
1 t chili powder
¼ t salt
2 8 oz cans tomato sauce
1 c cooked rice

Cut tops from peppers. Discard seeds and membranes. Place cut side up in square baking dish. Cover with clear plastic wrap and leave a small area unsealed at edge of dish to vent. Cook in microwave on high for 3 min. Remove peppers and drain any liquid from baking dish. Lightly sprinkle insides with salt. Cook ground beef or turkey until browned. Drain off fat. Stir tomato sauce, corn, chili powder, salt and rice into meat mixture. Cook until bubbly, stirring occasionally. Spoon meat mixture into peppers. Cover and vent. Cook in microwave on med for 5-7 min. Let stand for 3 minutes before serving.
