Cinnamon Streusel Coffee Cake Mini Muffins

A few months ago we posted our Coffee Cake Crumble Cheesecake Bars.  They are a twist on our mom’s famous coffee cake recipe which we are sharing here.  Growing up, mom always made this in a 9×13 pan but recently we’ve started making mini muffins instead.  These one bite muffins are loaded with the cinnamon streusel topping which has always been our favorite part of the cake.  Give our delicious Cinnamon Streusel Coffee Cake Mini Muffins a try.  They are great for breakfast or brunch or as an anytime snack.

Cinnamon Streusel Coffee Cake Mini Muffins

This recipe is so easy to make with ingredients you might already have on hand.  If you don’t have buttermilk, don’t forget about using an easy substitution.  Our favorite is 1T white vinegar plus enough milk to make one cup.  Stir to combine and let stand one minute before adding in the baking soda that the recipe calls for.

Cinnamon Streusel Coffee Cake Mini Muffins

These Cinnamon Streusel Coffee Cake Mini Muffins are so moist and delicious.  You will not be able to eat just one or two or three…  Fortunately, this recipe makes 48 mini muffins so there will be plenty to share.

If you decide to stick with a traditional coffee cake, spray a 9×13 pan with cooking spray and bake at 375 for 25-35 minutes.

Cinnamon Streusel Coffee Cake Mini Muffins

Ingredients

  • 2 1/4 cup flour
  • 1 cup brown sugar, packed
  • 3/4 cup white sugar
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup oil
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup buttermilk
  • 2 eggs

Instructions

  1. Preheat oven to 375
  2. Mix together the first 6 ingredients and save 1 cup for the topping
  3. Stir the baking soda into the buttermilk
  4. Add the baking powder, buttermilk mixture and eggs to the bowl and mix well
  5. Spray the mini muffin pan with cooking spray
  6. Fill 2/3 full with the muffin batter and sprinkle with the reserved topping mix
  7. Bake 10-11 minutes
  8. If you would prefer to bake in a 9x13 pan, bake for 25-35 minutes

  1. We love cinnamon and streusel so I don’t think that we can go wrong with this recipe. Your muffins sound so delicious. Thank you for sharing at Inspire Me Monday.

    1. I always use a substitute of vinegar or lemon juice mixed with milk in place of buttermilk (1T white vinegar or lemon juice plus enough milk to make 1 cup, stir and let stand for 5 minutes) I’ve never tried it with soymilk, though, so I’m not sure how it would turn out! If you try it and it works, please let me know!

    1. I have never made it without eggs or with non-dairy milk. You could try substituting applesauce for eggs and then a buttermilk substitute (1 T vinegar or lemon juice plus enough non-dairy milk to make 1 cup, stir and let stand for 5 minutes.) Let me know if you try it and how it turns out!
