Electric Pressure Cooker ~ Ramen Noodle Stir Fry

After a busy day of Christmas shopping and wrapping gifts I finally remembered at 5:30pm that I had kids and a husband to feed.  I had been craving Chinese food and just about sent my husband out for take out when inspiration hit!  I knew I had everything on hand to make a stir fry and because everyone was starving I thought I’d give my electric pressure cooker a try.  Dinner was on the table in less time than it would’ve taken him to drive to the restaurant and back home and it was delicious!

1 pound thawed ground turkey
2 packages chicken flavored Ramen noodles
2 cups water
1 can Chinese vegetables
1 T soy sauce
Green onions

Cook the ground turkey in the pressure cooker using the brown feature until done and season with salt and pepper to taste. For this step I leave the lid off and cook the turkey in the bottom of the pot just like I was cooking it in a skillet on the stove.  Next, Add the 2 packages of Ramen noodles as well as the seasoning packets along with the water, Chinese vegetables and soy sauce. Place the lid on the pressure cooker and set the time to 3 minutes (I used my cooker’s default cook setting which is 70 kPa). When the cooking time is complete, carefully release the pressure and give everything a quick stir. Garnish with green onions and enjoy!
